How can I hide some customer attributes when creating a new sales order on the backend?

I cannot figure out if there is a setting in Magento admin where I can remove certain customer or customer address attributes from showing up on the new sales order screen. Can you please help?

As an example, when I create a new sales order, I do not need to see the customer's birthday, LAT, LONG, fax number, etc. when I create the order. How can I hide these?
