Aqui está um bom exemplo de LINQ divertido.

Outras dicas
Fiz algumas pesquisas e descobri que o Byte.parse é ainda mais lento que o convert.Tobyte. A conversão mais rápida que eu poderia criar com usos aproximadamente 15 ticks por byte.
